
Garlic Collard Greens
- 1 bunch organic collard greens
- 2-3 garlic cloves, minced
- 1 tablespoon butter
- 1 tablespoon olive oil
- Salt, pepper and red pepper flakes to taste
- Fresh lemon juice to taste (optional)
- Bacon (optional)
Cut out stems and center ribs of collards. Roll the leaves up and then slice into one inch strips Submerge collards in boiling water for 15 minutes, drain.
Heat oil and butter in a heavy skillet over medium-high heat, when oil and butter are hot stir in minced garlic and collards. Add salt, pepper and red pepper flakes to taste. Stir and sauté the collards for 5 minutes, until fragrant and hot. Sprinkle with fresh lemon juice to taste and enjoy. For a real treat toss chopped, freshly fried bacon in with the collards! Serves 2-3.
